Spinach Omelette

Ingredients

1/2 onion chopped finely
1/4 chilli chopped finely
3 eggs beaten well
1 cup spinach
1 tbl chopped basil(optional)
2 tbl crumbled feta
2 tbl grated cheese
1 clove garlic/chopped
4/5 cherry tomatoes cut in half or quarter tomato sliced
1 tbl oil
salt to taste

Method

In a thick based pan ( I use a cast iron), use half the oil to saute the onions and chillies.
Remove from pan and keep aside.
Now add the garlic and allow to brown, add spinach and saute quickly. Remove from pan and add to the onions.
Now add the rest of the oil to the pan and spread over the entire surface.
Pour the eggs into the pan
Toss the onions and the spinach over the eggs, as well as the chopped tomatoes, two cheeses and the basil.
Cover the pan and leave on low until the eggs are fluffy and the cheese has melted.

I created this blog to chat with family and friends about cooking, new recipes I have created and answer any questions that you may have.

When I was in South Africa recently, my friend Symmie reminded me of a delicious Sago Pudding that my mum used to make. Regrettably, I did not get the recipe from her- but decided to come up with my own recipe. This is now in the making and when I have mastered it, I will add it to my website at premiskitchen.com.
