A yummy satiating tofu sandwich


Premi whipped this out in no time today and I got to enjoy it for lunch, so I have to put it down.

Here's how you can make it:

Ingredients:
  • Bread, of course. This used the organic multi-grain artisan bread from TJ
  • Cheese (jalapeno jack)
  • Avocado
  • Tofu (brined and grilled)
  • Salsa (recipe below)
  • Cukes
  • pesto, mayo, salt, pepper, butter
Warm the bread on a flat pan. Apply butter on it and let it brown. On the other side (side facing up), apply pesto on one, mayo on the other slice. Over the mayo, drop some grated cheese. Then, layer the tofu, avo, cukes and salsa. Sprinkle salt and pepper. Once the cheese is melted, put the pesto slice over the rest, and voila, your sandwich is ready to eat.

Salsa: Chop fresh tomato, cerrano chilies, garlic, onions and cilantro into a bowl, add lemon juice and mix.

Tofu: Cut into large slices (2" square) and soak in warm salted water for 30 mins. Grill or sautee with a little oil.
