Yummy (sugar-free) Banana Bread


We gave up sugar at the beginning of the year, the reasons were two-fold, for health reasons, and because Sri was surrounded by candy at work, and wanted to resist eating them. Interestingly enough, when you stop eating sugar, you actually lose the craving, and we have not been tempted thus far. We, however, wanted the option of having some cake with our tea, so I devised this recipe.

You really can't tell it is sugar free, which is the best part for all you sugar-deprived people.

So here's the recipe. (From the picture you can see that we have already tested the recipe). It is really good, and the taste grows on you. We like using healthy ingredients but if you do not have flaxmeal or oatmeal, whole wheat flour will do.

1/2 C Oatmeal
1/4 C Flaxmeal
1/2 C Whole Wheat flour
1/4 C All purpose flour
1 Tsp Baking Soda
1/2 Tsp salt

5 Over-ripe bananas, mashed
1/4 C Dates, pitted and chopped
1/4 C Walnuts, chopped
1/4 C sugar-free Chocolate Chips (available at Whole Foods)
1/4 C organic apple sauce
1 Tsp Vanilla Essence
2 Eggs
1/2 C Butter (or Oil)

Method

Preheat oven to 350 F
Cream the butter and add the eggs
Whip the butter and eggs together
Add the vanilla essence and the bananas
Add the walnuts, chocolate chips and dates
Mix all the dry ingredients in a separate bowl
Fold into the banana mixture
Line a loaf pan with wax paper and line the wax paper with butter (or oil)
Pour mixture into loaf pan and bake for 1 hr.
